Not every weekend we may have time to cook pancakes, muffins or biscotti so for this week’s healthy breakfast I decided to simplify and make oatmeal accompanied by fruits. You can get creative with it. The fruits should be fresh and in season but how many and which ones is entirely up to you. I used what I had at home, some blueberries, apple, figs from my tree and banana. You could also use papaya, strawberries, pears, you get the idea. I also used honey instead of sugar to make it healthier. It was adapted from a recipe of the Portuguese Chef Mafalda Pinto Leite.
The Blackberry kiwi juice is an antioxidant. Both the blackberries and kiwi have vitamins C, E and betacarotene. This helps to prevent premature aging. I adapted this recipe from a Mexican magazine called “Jugos curativos”.
Healthy Oatmeal Breakfast
Serves 4
- 4 cups water
- 2 cups oatmeal
- 1/4 tsp cinnamon
- 2 tbsp yellow sugar or honey
- pinch of salt
- 1 cup milk
- seasonal fruit to taste
- In a saucepan bring the water to a boil. Add the oatmeal, cinnamon, sugar or honey, and a pinch of salt. Cook in low heat stirring constantly for 5 to 8 minutes, until smooth and creamy.
- Remove and add the milk mixing well. Divide in bowls, cover with the fruit and sprinkle with cinnamon to taste.
Blackberry Kiwi Juice
Serves 4
- 6 cups blackberries
- 2 kiwis, peeled
- ice cubes if desired
In an electric blender, blend all the ingredients together. I added a few ice cubes and if you are like my husband and don’t like the stones, pass the juice through a sieve. Blackberries can also be a little acid so if you want to add more sweetness just use a bit of honey to taste. Enjoy one more healthy breakfast and have a nice weekend!
